Meatballs with pumpkin and coconut sauce

Ingredients
  • 2 packs of Hi-vegs Pea Protein
  • Meatballs
  • 1 onion
  • 1 carrot
  • 250g pumpkin
  • 2 kaffir lime leaves (optional)
  • 1 level teaspoon of spicy curry powder
  • Vegetable broth
  • ½ jar coconut milk
  • Salt to preference
  • Extra virgin olive oil
Elaboration

Sauté the onion, carrot and half of the diced pumpkin in a pan with olive oil along with the kaffir lime leaves. Add a little salt.

 

When they are a little softer and with some color, add the curry powder, stir and add vegetable stock to cover. Simmer until the vegetables are tender.

 

Add the coconut milk and simmer for 5 more minutes.

 

Remove the kaffir lime and puree to a fine cream. Rectify the salt if necessary.

 

Sauté the remaining pumpkin cubes in a frying pan with a little oil, salt and pepper until cooked, but al dente.

 

Mix the meatballs with the sauce and cook for five minutes, add the pumpkin cubes and chopped coriander, serve with cooked basmati rice.
