Oriental noodles sautéed with mushrooms and vegetables

  • 100g natural Hi-vegs pea protein chunks
  • 200g Asian soba noodles
  • 2 garlic cloves
  • 1 small piece of ginger
  • 1 spring onion
  • 50g green beans
  • 50g shiitake mushrooms
  • 3c/s soy sauce
  • 2 tbsp fish sauce
  • 2 tbsp/s sesame oil
  • Sesame seeds
  • 1 chili or chilli
  • Coriander

Chop the green beans, cut the mushrooms into strips and cut the spring onion.


On the other hand, in a frying pan or wok sauté the vegetables with the sesame oil, once they are al dente add the garlic, chopped ginger, cook until golden and add the mushrooms along with the chili, leave for a few seconds and add the fish sauce and soy sauce, add the natural chunks and sauté for a few seconds.


Add the soba noodles cooked according to the manufacturer's instructions and mix everything, add salt and sprinkle with sesame seeds and coriander.


If they are too dry, add a few spoonfuls of water from cooking the noodles.
