Stuffed tomatoes with veal bites

Ingredients
  • 100g Hi-vegs beef flavored pea protein morsels (cut 2)
  • ½ onion
  • ½ red bell bell pepper
  • 2 cloves garlic
  • 3 tbsp tomato sauce
  • 4 large red tomatoes
  • 30g pine nuts
  • 1 handful of raisins
  • 1 chili
  • 1 bunch of basil
  • 50g cooked corn
  • Pepper
  • Salt
  • Olive oil
Elaboration

In a frying pan with a little olive oil poach the onion, bell pepper and garlic, all chopped. Once poached add the tomato sauce, the chopped chili, the pine nuts, the raisins, the cooked corn and the basil, cook for a few seconds and add the morsels, leave for another minute, season with salt and pepper.

 

Meanwhile, cut the tomato by the stalk and the base, slightly, to be able to support them without tipping, empty the tomatoes with the help of a spoon and season the inside, set aside.

 

Fill the tomatoes, place the lid, add a drop of oil on top and bake at 200ºC for about 15-20 minutes depending on the size of the tomatoes.
