Arancinis with red pesto

Ingredients
  • Pea protein arancinis and rice hi-vegs

Red pesto

  • 10 sun-dried tomatoes in oil
  • 1 bunch of basil
  • 30g pine nuts
  • 30g grated parmesan type
  • vegan cheese
  • 1 clove of garlic
  • Olive oil
  • Juice of half a lemon
  • 50g of fried tomato
Elaboration

Toast the pine nuts in a frying pan without oil over moderate heat.

 

Remove the germ from the garlic. Put it in a blender, add the nuts, the dried tomatoes, the vegan cheese, the washed basil leaves, the lemon juice, the fried tomato and the salt, blend, add oil until you have the desired texture, season with salt.

 

Fry the arancinis in plenty of olive oil at 170ºC for 3-4 minutes and set aside on kitchen paper, drain well and serve with the red pesto sauce.
